One Pot Mushroom Quinoa
Quinoa quinoa and quinoa is the most common word at my place these days 🙂 After experimenting with a small packet of quinoa and getting a green signal from hubby for my experiments, I took a plunge and ordered a whopping 1.4 kilograms packet of organic quinoa from Amazon.in Now, the next ordeal is to try some more recipes using this super awesome protein rich grain. The best part is that cooked quinoa lasts
for atleast 4-5 days in the refrigerator. So, once you have cooked quinoa with you, you can be creative and try various recipes like cutlets, soups, recipes similar to Indian Chinese style fried rice, tomato rice, pulao, biryanis, khichdi etc. The list is endless…..
However, all these are kind of an acquired taste. You definitely need to eat it a couple of times to actually like it, but definitely worth a try considering the huge health benefits of quinoa. Stay tuned for an uthappam recipe with quinoa 🙂
Ingredients:
- Quinoa 100 gms
- Mushroom 125 gms
- Salt to taste
- Onion 1 big
- Garlic cloves 3-4
- Fresh crushed pepper 1 tsp
- Olive oil 1 tbsp
- Spring onion greens 2-3 sprigs
- Vegetable stock/water 200-225 gms
- Butter 1-2 tsp (optional)
Method:
- Wash the quinoa in a strainer for 3-4 times. Drain and keep aside for around half an hour to one hour.
- Slice the onion, garlic finely and chop the mushrooms into medium slices.
- Heat oil in a thick pan and saute the onion and garlic slices.
- When they turn golden, add the mushroom slices and saute in high flame till the water evaporates.
- Now, add the drained quinoa and saute for two minutes.
- Add vegetable stock or water and bring to a boil. Season with salt and crushed pepper.
- Cover and cook on low flame for 12-15 minutes or till it’s fully cooked.
- Switch off the flame and allow it to rest for five minutes.
- Garnish with finely chopped spring onion greens, as small dollop of butter (optional) and serve hot with vegetable stir fry or raita or grilled chicken pieces. A yummy n healthy protein rich lunch is ready 🙂
