Barley Vegetable Pulao
Few days back, I had posted a recipe of a spicy barley khichdi loaded with vegetables. Here is another simple and a healthy recipe made with broken barley or barley dalia. This is a soothing and comforting food ideal when you are taking steps towards a healthy living. The health benefits of barley are many and it’s a versatile ingredient which can be used in various
bakes, soups, dosas, uthappams and so on.
It’s a one pot meal which is quite filling and can be made under 30-35 minutes. You can add any vegetables of your choice. If you want a mushy texture, cook for longer and add less water. On the other hand, use only double the amount of water and cook for slightly lesser duration, if you want each grain seperately. I have used a 240 ml cup. Stay tuned for more barley recipes 🙂
Ingredients:
- Barley dalia 1/2 cup
- Salt to taste
- Onion 1
- Tomato 1
- Green chilies 2-3
- Ginger a small piece
- Carrot 1
- Beans 7-8
- Green peas 2 tbsp
- Mushroom 5-6
- Turmeric powder 1/2 tsp
- Pepper corns 5-6
- Oil 1 tbsp
- Water 1-1.5 cups
Method:
- Wash and drain the barley and keep aside for an hour.
- Chop the veggies into small pieces.
- Heat oil in a pressure pan and saute the vegetables for 3-4 minutes.
- Add the soaked barley, salt and turmeric powder and mix well.
- Now add around 1-1.5 cups of water and bring to a boil. Add a teaspoon of ghee.
- Cover and cook on low flame for 25-30 minutes.
- Switch off the flame and allow it to rest for 5-10 minutes.
- Garnish with finely chopped coriander leaves.
- Serve with a bowl of curd or raita.
