Quinoa Cutlets
As promised in my earlier post of quinoa with veggies, I am back with yet another interesting quinoa recipe. This can be an ideal 4 pm snack or any early dinner for your health freek hubby/spouse or gym enthusiast teenager or parents/in law or even yourself 🙂 As mentioned in the earlier post, cooked quinoa can be refrigerated for 4-5 days and can be used in various forms throughout the week. As a trial, I had bought only a small packet of quinoa last time. But responses from folks at home
have made me order a big pack from Amazon.in yesterday. I am myself looking forward to trying out few more recipes with it and I shall be uploading the successful ones with you all 🙂
You may add grated carrots, finely chopped beans, crushed green peas or corn kernels, some grated cheese or paneer to make these cutlets more interesting and healthy. Potatoes can be replaced with boiled raw plantain or sweet potatoes. Use this as a basic recipe for quinoa cutlets and create magic in your kitchen using your creativity 🙂 And please do not forget to share your creations with me. Till then, stay healthy, be happy.
Ingredients:
- Cooked quinoa 1 cup
- Onion 1 small
- Green chilies 1-2
- Garlic 2 cloves
- Spring onion greens 2 tbsp
- Salt to taste
- Boiled potato 1
- Olive oil 1-2 tbsp
- Bread crumbs 1-2 tbsp (optional)
Method:
- Chop the onion, garlic, green chilies and spring onion greens finely and transfer it into a mixing bowl.
- Grate a boiled potato into this mixture.
- Add the cooked quinoa and salt to taste.
- Mix well and knead into a dough. If the mixture appears very moist, add one or two tablespoons of bread crumbs into this.
- Make lemon size balls of this mixture and flatten it in your palms.
- If you have enough time at your disposal, refrigerate these cutlets for atleast half an hour.
- Heat an iron skillet or a grill pan and add a tablespoon of oil to it.
- Shallow fry these cutlets till its golden on both sides and turns crisp in texture.
- Remove from heat and serve it hot with a chutney or dip of your choice.
