Strawberry Whole Wheat Cookies
Strawberries are in season and most bakers would be surely excited to use it in various bakes. Aren’t they one of the most pretty looking seasonal fruits? I already have a couple of strawberry based recipes like strawberry cake, all purpose flour strawberry cookies, strawberry muffins, strawberry hot milk cake, Neapolitan cake and so on. You may check out how to make strawberry compote too. Here is another one to the lot 🙂 These are pretty simple to make and has a nice strawberry flavour too. Though the cookies have spread out a bit,
making it flat, it’s absolutely crispy and yummy 🙂 The oats give it a beautiful texture too.
The dough is a bit sticky unlike other cookie dough due to the addition of fresh strawberries. Remember to refrigerate the dough for around an hour or so. Also leave ample space between two cookies. As each oven behaves differently, please do check after fifteen minutes or so. Incase it spreads more than desired, it will bake much faster and will burn too quite quickly. So, please keep an eye on it. Moreover, if you do not have strawberry flavoured custard powder, feel free to use plain vanilla flavoured one. You may additionally add one or two drops of pink food colour for an added effect.
Ingredients:
- Whole wheat flour 100 gm
- Oats 50 gm
- Strawberry custard powder 25 gm
- Fresh strawberries 75 gm
- Cane sugar 75-80 gm
- White choco chips 75 gm
- Butter 75 gm
- Salt a pinch
- Strawberry/vanilla extract 1/2 tsp
Method:
- Sieve the whole wheat flour and strawberry favoured custard powder with a pinch of salt for 2-3 times.
- Add oats to it and mix well. If you prefer, you may pulse the oats into a coarse powder before adding it to whole wheat flour. I have not powdered the oats as I prefer the texture of whole oats.
- Chop the strawberries into small pieces.
- Beat the butter and sugar till it’s light and creamy.
- Add the extract into the butter-sugar mixture and mix .
- Now add the sieved dry ingredients into this butter mixture.
- Furthermore, add the chopped strawberries and white choco chips and mix well.
- Allow the mixture to rest in the refrigerator for atleast half an hour. The dough will be sticky due to the fresh strawberries.
- Meanwhile, line a baking sheet with parchment paper.
- Preheat the oven at around 150-160 degree Celsius for atleast ten minutes.
- Once the dough looks firm and ready to be shaped, take lemon sized balls and flatten it a bit in your palm.
- Arrange it neatly on the baking sheet lined with parchment paper leaving some space between two consecutive cookies.
- Bake the cookies for 18-20 minutes or till the sides look golden and the top looks a bit firm.
- Take the tray out of the oven and allow the cookies to cool a bit the tray.
- Transfer the cookies onto a wire rack and cool completely.
- Store the cookies in good airtight containers and enjoy it with a cup of cold milk.
