Potato Nuggets
Potato nuggets…. Hmm…. Mouth watering, isn’t it? I have made this many times, but somehow couldn’t find its place in the blog yet 🙁 Finally, when Neha was going with her school team for a cultural programme, made these for their evening snack. As is the case with me always, I made a big batch and send many of these with her along with my special hot milk marble cake. But, unfortunately, some kids were reluctant to eat it and few others simply
took a small bite. (Her classmates were not with her and may be others didn’t know how famous Neha’s tiffin box were 🙂 ). That left my baby sad and she was upset that amma had made it with so much love and affection and it didn’t get over. I thought kids might be hungry and they would gobble up everything in minutes. I was wrong. I don’t know now what happened in the end. Wonder what happened to the cake 🙂
This has made me think…. Kids are so different these days. Forget kids, human beings are so different these days. Gone are the days when people used to build strong relationships during train journeys and share whatever food each had. Being a single child, my baby is a bit reserved and silent and it’s tough for us as parents as well as her to be away from each other. But yes, this trip is just a beginning and she has to face this tough world !! anyways .. here is the recipe. I have shallow fried these. You can deep fry them for an added texture.
Ingredients:
- Potatoes 3
- Salt to taste
- Bread crumbs as required
- Bread slice 1-2
- Grated cheese 1-2 tbsp
- Oil for frying
- Red chili flakes to taste
- Onion a small one
- Fresh corn 2-3 tbsp
- Carrot 1 small
- Coriander leaves 2-3 sprigs
- Garlic cloves 2-3
Method:
- Boil the potatoes well and cool it. Peel off the skin and grate it.
- Boil the fresh corn and crush it a bit. Do not make a fine paste.
- Finely chop the onion, garlic, carrot add the fresh corn.
- Transfer the grated potato into a big mixing bowl and add salt, red chili flakes, the chopped veggies, grated cheese, finely chopped coriander leaves and mix well.
- Crumble 1-2 bread slices and add it to the mixture and mix to form a dough.
- Shape it into two inch long nuggets and roll it in dry bread crumbs.
- Allow these to rest in the refrigerator for atleast half an hour.
- Deep fry them in medium hot oil or shallow fry them in a grill pan.
- You can even bake them in a preheated oven at around 180-200 degree Celsius for 20-25 minutes or till the top looks golden in colour. You may brush the top with some oil.
- Serve it hot with a dip of your choice.
