Green Tomato Subzi
Green tomatoes or the unripe tomatoes taste quite different from the ripe red tomatoes. It’s more tangy, more firm and retains the shape even after cooking. It can be used to make stir fries or used to make salsa and chutneys. The below recipe is a neither a stir fry nor a chutney. But its a simple combination of the two. It pairs well with dal and rice or can be enjoyed with rotis. Green tomatoes are
rich source of vitamin A and C. Moreover they are low in calories and rich in nutrients. One can enjoy these sour n sweet n tangy dish with rotis or stuffed parathas.
Ingredients:
- Green tomatoes 4-5
- Salt to taste
- Onion 1
- Green chilies 1-2
- Jaggery to taste
- Turmeric powder 1/4 tsp
- Red chili powder 1/2 tsp
- Mustard seeds 1/4 tsp
- Methi seeds 5-6
- Refined oil 2 tsp
- Curry leaves few
- Coriander leaves for garnish
Method:
- Wash and slice the green tomatoes into thin pieces.
- Slice the onion and green chilies too.
- Heat oil in a kadhai and add mustard and methi seeds.
- When they crackle, add onion, curry leaves and green chilies.
- Once the onions are soft, add the chopped tomatoes, dry spice powders.
- Add salt to taste and cover the kadhai. Add jaggery to balance out the flavours.
- Cook till the tomatoes are soft and slightly mushy.
- Garnish with finely chopped coriander leaves and serve it with rotis or rice.
