Mushroom Spinach
Spinach and mushroom is a wonderful combination. I often make many gravies using spinach or palak puree. This not only makes the dish look beautiful, but it increases the taste and nutritional value too. Spinach is no doubt one of the most healthiest vegetable available. It’s high in calcium, vitamin A, folic acid, iron etc. Mushrooms are also low in calories but very high in proteins and dietary fibre. In addition, it contains
vitamin B, selenium, potassium, copper and vitamin D.

Ingredients:
- Mushroom 1 pkt
- Spinach 1 bunch
- Salt to taste
- Onion 1 big
- Tomato 1 big
- Green chilies 2-3
- Red chili powder 1/2 tsp
- Turmeric powder 1/2 tsp
- Coriander powder 2 tsp
- Garlic cloves 6-7
- Cumin seeds 1 tsp
- Refined oil 1 tbsp
- Fresh cream 1-2 tbsp
- Kasuri methi 1 tsp
Method:
- Wash and clean the button mushrooms and cut them into quarters.
- Blanch these in boiling water for 4-5 minutes.
- Clean the spinach leaves and wash them thoroughly.
- Blanch them too in boiling water for 4-5 minutes.
- Drain and immerse it in ice cold water.
- Roughly grind the onion, garlic cloves and green chilies.
- Make a smooth puree of the blanched spinach.
- Heat oil in a kadhai and add cumin seeds.
- When they splutter, add the ground onion paste and saute for 4-5 minutes.
- Now puree the tomato and add it to the kadhai.
- Now add the dry spice powders and cook till the raw smell of the masala goes off.
- Add the blanched mushroom and toss gently. Sprinkle some crushed kasoori methi.
- Furthermore, add the spinach puree and bring to a boil. Add salt to taste.
- Finally garnish with fresh cream.
- Serve it hot with rice or rotis or parathas.
