Carrot Rice
Carrots are a rich source of vitamin A and every mother tries to incorporate it in her child’s meal. Now, it’s a known fact that kids are not a big fan of salads and we can’t always give them carrots in the form of salads. peasy recipe of carrot rice. Once you have some cooked rice in your refrigerator, this gets done under five minutes.
All you have to do is to stir fry the ingredients for few minutes and it’s ready. Perfect to pack in your kids’ lunch box or to have when you run out of vegetables or you are too bored to make an elaborate meal. Add or omit ingredients according to your palate.
Ingredients:
- Cooked Basmati rice 1 cup
- Salt to taste
- Onion 1 small
- Carrots 2
- Green chilies 2-3
- Ginger 1/2 inch piece
- Udad dal 1 tsp
- Mustard seeds 1/2 tsp
- Chana dal 1 tsp
- Refined oil 1 tbsp
- Curry leaves 8-10
- Coriander leaves for garnish
- Dried red chilies 1-2
- Roasted peanuts 2 tbsp (optional)
- Cashew nuts 5-6 (optional)
- Grated Coconut 2 tbsp (optional)
Method:
- Wash and grate the carrots using a grater.
- Chop the onion, green chilies and ginger finely.
- Heat oil in a heavy flat pan and add the mustard seeds.
- When they crackle, add curry leaves, dried red chilies, udad dal and chana dal.
- Now add the roasted peanuts and cashew nuts and fry for two minutes.
- Furthermore, add the onion, green chilies and ginger. Cook for a minute.
- Add the grated carrots and cook for two minutes. Add salt to taste.
- Now add the cooked rice and toss gently. Sprinkle some water and mix everything.
- Garnish with finely chopped coriander leaves and grated coconut.
- Serve hot with your favourite pickle and chilled raita.
Notes:
- It’s ideal to be packed in your kids lunch box. Tastes good even when it’s cold.
- This is a mild vegetable rice perfect for small kids.
- I have not added peanuts, cashew nuts or grated coconut.
- Do not skip the ginger as ginger lends a fresh flavour to the recipe.
