Apple Rabri/Kheer
A very simple and flavourful dessert with the richness of creamy rabri, healthy apples and nutty almond flakes. All you need is some apples, full cream milk and some sugar. If you are not a fan of cinnamon like my family, you can skip adding cinnamon powder. But trust me, apple and cinnamon is a match made in heaven and it goes very well together.
I have added very little sugar, as my apples were sweet and I wanted my dessert to be just mildly sweet. You can very well add more sugar and in fact replace the brown sugar with white sugar.
Once the milk starts boiling, reduce the flame and keep stirring it at constant intervals and reduce it to almost half the volume. Cook the apples till they are soft and cooked well. Do not boil long after the apples are added to the reduced milk or else the milk might curdle. I had a similar experience few years back when I tried to make an apple kheer. I had added grated apples to boiling milk then. However, to avoid that, I have first cooked the apples in sugar and then added it to reduced milk. It tastes awesome when served chilled. Ingredients:
- Apples 2
- Full cream milk 1 litre
- Brown sugar 5-6 tbsp
- Cinnamon powder 1/2-1 tsp
- Almond Flakes 2 tbsp
Method:
- Wash and pat dry the apples well. Grate them along with the skin using a grater.
- Boil the milk in a heavy bottom sauce pan and reduce it till it becomes almost 60-65 % of the original volume.
- Cook the grated apples with brown sugar till its fully cooked and almost dry. Add the cinnamon powder.
- Add the cooked apple into the reduced milk or thick rabri and mix well. Do not boil much. Adjust the sweetness as per your liking.
- Remove from flame and garnish it with almond flakes or slivers of almonds.
- Refrigerate for few hours and serve it chilled.
