Matar/Peas Pulao
A simple yet flavourful rice loaded with fresh green peas. Generally when we make pulao, we add the veggies, rice and spices together and cook it till the rice is soft and tender. But to keep the green colour of peas intact, I have cooked the rice first and then mixed it with fresh blanched green peas and mixed up everything. Also haven’t used any whole spices. You may choose to use cinnamon, cloves
and bayleaf depending on your liking. This simple rice pairs well with any spicy chilled raita or any gravy of your choice. Please do try and share your feedback. I have used a 240 ml cup.
Ingredients:
- Fresh green peas 1/2 cup
- Cooked basmati rice 1 cup
- Salt to taste
- Butter 1 tbsp
- Oil 1 tsp
- Spring onion 2-3 stalks
- Green chilies 1-2
Method:
- Wash and soak the basmati rice for atleast half an hour. Cook the rice with double quantity water with a pinch of salt.
- Blanch the fresh peas in boiling water for 5 minutes and drain it. Add cold water to it.
- Chop the spring onion bulb and greens.
- Heat butter and oil in a flat pan.
- Add the peas into it and saute it lightly. Sprinkle some salt.
- Now add the spring onion and green chilies. Cook for 2 minutes.
- Add the cooked rice and toss gently.
- Once everything is mixed, remove from flame and serve it hot with your choice of curry and raita.
- We had it with mushroom methi malai and bellpeppers raita. Enjoy !!
