Coleslaw Sandwich
Last week, we celebrated my Neha’s birthday and she had invited some of her friends home for a small party. For the past 3 years, I have been baking and cooking various stuffs for her friends on her birthday. Last year, the menu had bread canapes along with doughnuts, hakka noodles, pizza cups and other snacks. So, this time,
we decided to make these coleslaw sandwiches.
Coleslaw is basically a fresh salad made using shredded cabbage, carrots and dressed with mayonnaise or vinaigrette. It goes quite well as a filling for sandwich. You can use any bread of your choice. I have used my sandwich bread recipe using the 13 by 4 by 4 inches Pullman loaf tin. Also the mayonnaise is an eggless one made at home using fresh cream and oil. Please do try it at home and share your feedback.
Ingredients:
- Bread slices 10
- Shredded cabbage 1/4 cup
- Grated carrot 1/2 cup
- Finely chopped lettuce 1/2 cup
- Salt to taste
- Mayonnaise 4-5 tbsp
- Pepper powder as required
Method:
- Trim the edges of the bread (if desired) and cut it into triangles.
- Place the shredded cabbage, carrot and lettuce leaves in a big mixing bowl.
- Add around 3-4 tablespoon of mayonnaise to the bowl.
- Add salt and pepper powder and stir well.
- Cool for few minutes.
- Apply some mayonnaise on each bread piece and spread a generous layer of coleslaw. Cover with another bread piece.
- Keep it aside for few minutes and serve it with a drizzle of tomato sauce if desired.
