Bread Puttu
Another easy peasy recipe made with left over bread, apart from Neha’s favourite bread upma !! Or in other words, a better way to use your experimental breads when they don’t turn out as soft and porous as desired. You can use any kind of bread, all purpose flour or whole wheat flour or semolina or a combination of these. You don’t even need the traditional puttu maker which is used to make the
original version of puttu using rice flour. Use an empty coconut shell and you have an amazing, healthy and oil free steamed dish ready.

Try this kadala curry which is a perfect and most appropriate accompaniment with puttu. If you don’t have an empty coconut shell, do not fret !! Simply sprinkle handful of these crumbs and grated coconut in your idli plate and steam it. The result will be same. So, without much delay, why don’t you try it out? Ingredients:
- Bread slices 4-5
- Grated coconut 3-4 tbsp
Method:
- Tear the bread into pieces and pulse it in a dry mixer.
- Transfer the bread crumbs into a bowl.
- Take an empty coconut shell and wash it clean.
- Make a small opening on one of the eye of the shell with a knife or screwdriver. The hole should be big enough so that the the vent on which we place the whistle should easily slide through.
- Sprinkle some grated coconut at the base of the shell.
- Now sprinkle (very gently) some bread crumbs on top.
- Halfway through, sprinkle some more grated coconut.
- Now add bread crumbs again. Finally add a layer of grated coconut.
- Pour 1.5-2 cups of water in the pressure cooker and close the lid. Bring it to a boil. Do not place the whistle.
- Now carefully, place the coconut shell in place of the whistle.
- Cover with a lid and steam for 2-3 minutes till you can see steam coming out of the lid.
- Remove the shell carefully and then invert it onto a plate.
- Soft and fluffy bread puttu is ready to be served.
