Carrot Kheer
If you read my previous post, you would know the story behind these juicy and fresh red carrots 🙂 So, as I have mentioned in the earlier post, I was quite excited to procure these. Hence I decided to make some carrot halwa with lots of khoya and this creamy and delicious carrot kheer. It’s an extremely simple dessert and can be enjoyed either piping hot or chilled. The saffron and cardamom powder blends well with the khoya and carrots. You can increase the amount of sugar
depending on the sweetness of your carrots. I have kept it very mildly sweet.
You require very few ingredients to prepare this delicacy and neither does it take too much time for preparing. The only difficult part is to grate the carrots. Once, you have that, then it’s a simple procedure. I have made it with red carrots. You may use the orange coloured carrots too, but then add more sugar and compromise on the colour. This is a perfect dessert for the cold winter weekend nights. I have used a 240 ml cup.
Ingredients:
- Grated carrots 2 cups
- Sugar 3-4 tbsp
- Cardamom powder 1 tsp
- Khoya 2 tbsp
- Saffron strands a pinch
- Milk 1 litre
- Almond/pistachio slivers 1-2 tbsp
- Ghee 1-2 tbsp
Method:
- Heat ghee in a heavy bottom pan and saute the grated carrots till they are soft and dry.
- Add the milk and cook till the milk reduces to half. Keep stirring in between.
- Add saffron dissolved in a spoon on warm milk.
- Add the khoya and mix well.
- Finally, garnish it with cardamom powder, almond slivers and saffron strands.
- Serve it hot or chilled.
