Mincemeat/Dried Fruits Cookies
If you follow my blog regularly, you would have read about the history and procedure of making the vegetarian and alcohol free version of mincemeat. Please, please believe me, it doesn’t have any minced meat, it’s purely purely vegetarian 🙂 Incase you have missed it, please click here. You can also try eggless mincemeat cake. The recipe is a simple and standard way of making cookies. I have used whole wheat flour and not used any additional sugar in the recipe. The only sugar is from the dried fruits and the small amount that was added while making mincemeat. I have added
around 2 tablespoon of dark Treacle for beautiful flavour and colour.
It’s almost the end of the year and everybody is in a relaxed holidaying mood. So, we decided to take some baked stuffs for hubby’s office colleagues. I made an eggless mawa cake (doubled the recipe) and thought you pack these cookies too along with it. This is a rich cookie and has lots of dried fruits in it. You can added finely chopped toasted nuts (like cashews, almonds, walnuts etc) too for an even better crunch. The wheat flour gives it a more earthy taste. I loved the combined taste of dark treacle and butter 🙂 it was simply awesome. I have used a 240 ml cup. You can completely omit the rising agents.
Ingredients:
- Whole wheat flour 175 gm
- Salt a pinch
- Brown sugar 1-2 tbsp (optional)
- Mincemeat 1-1.25 cups
- Butter 100 gm
- Cinnamon powder 1 tsp
- All spice powder 1/2 tsp (optional)
- Dark treacle 2 tbsp
- Baking powder a pinch (optional)
- Baking soda a pinch (optional)
Method:
- Sieve the wheat flour with salt, cinnamon powder, all spice powder and rising agents (if using) 2-3 times.
- Cream the butter till its soft. Add the treacle and mix well.
- Add the mincemeat and stir.
- Add the flour mixture and gently bring together form a dough. If required add 1-2 tablespoon of brown sugar (depending upon your choice of sweetness and how sweet your mincemeat is).
- Make small balls of the mixture and slight flatten it in your palm.
- Lay them on a baking sheet lined with parchment paper.
- Preheat the oven at around 150-160 degree Celsius for atleast 10 minutes.
- Bake the cookies for 25-28 minutes or till it looks done
- Remove the tray from the oven and allow the cookies to cool in the tray for 4-5 minutes.
- Transfer into a cooling rack and cool completely.
- Store in airtight containers and enjoy.
Notes:
- If you don’t have mincemeat ready, use any dry fruits of your choice.
- These are very rich cookies with oodles of dried fruit in each bite.
- The dark Treacle lends these cookies a beautiful colour. The dark treacle and butter combined with each other gives a perfect caramel toffee taste.
- If you do not like spice flavour, you can omit it and use some vanilla extract instead.
