Jeera Rice
One of the most simplest rice to make and it tastes absolutely delicious with a simple dal tadka or a chhole or rajma or dal makhni. You just need a bowl of this rice which should be hot n steaming, a curry and some raita and trust me you wouldn’t need anything else. Atleast that’s the case with my daughter 🙂 The days when she is at home for lunch, I make
sure to make some rajma or dal makhnior chole with jeera rice or plain basmati rice.
You can make this with left over rice too. Just give a simple tempering of cumin seeds in some ghee/clarified butter or plain butter and garnish it with some finely chopped coriander leaves and you are done. You may add spices like cinnamon, cloves, cardamom and bay leaf too if you please. But I avoid it. Or alternatively, you can first fry cumin seeds and spices in ghee or butter and then add soaked rice and then cook it. But this would make the colour of rice slightly yellowish due to the cooked cumin seeds. I somehow prefer to cook the rice first and then give a tempering of cumin seeds to retain the nice white colour of basmati rice. The choice is entirely yours. Ingredients:
- Basmati rice 1 cup
- Salt to taste
- Water 2-2.5 cups
- Ghee 1 tbsp
- Chopped coriander leaves 1 tbsp
- Cumin seeds 1 tsp
Method:
- Wash the rice and drain the water and rest it for half an hour.
- Transfer the rice into a big flat pan and add around 2 to 2.5 cups of water.
- Add salt and bring to a boil. Cover and cook for 12-15 minutes. Now switch off the flame.
- Allow it to remain undisturbed for atleast 10-15 minutes.
- Now heat the ghee in a pan and add the cumin seeds.
- When they splutter add it to the rice and toss gently. Take care not to break the grains.
- Garnish with finely chopped coriander leaves and serve hot with any curry of your choice.

Notes:
- The amount of water in the rice depends on how old or aged your rice is. My Daawat basmati rice is quite aged and so I needed around 2.5 cups of water for a cup of rice.
