Palak/Spinach Paratha
Do I even have to talk about the nutritive value or health benefits of spinach? Nah! Right. Even a small baby knows that spinach is good for health, courtesy Popeye 🙂 So, what are your favourite spinach recipes? I usually make spinach dal curry with coconut or the most popular palak potato curry or Neha’s favourite palak chicken or a simple no oil palak gravy or dal palak or at times palak pulao. However, I have never tried spinach
bread, though it has been there in my mind since long. The beautiful bright green colour is simply amazing. I have used spinach in my eggless quiche recipe.
As I have mentioned in my earlier post, I am on a small mission to include various parathas in the blog. The below recipe is made by kneading the dough with finely chopped spinach leaves and other seasonings. You can first blanch the spinach, then puree it and then add it to the flour and knead the paratha dough. Try making palak puris in a similar way. I can assure you, kids will love it for the bright green colour. Or else try making a palak soup or shorba. It tastes yum.
Ingredients:
- Spinach a small bunch
- Salt to taste
- Turmeric powder 1/2 tsp
- Chat masala 1/2 tsp
- Whole wheat flour 1 cup
- Red chili powder 1 tsp
- Cumin seeds 1/4 tsp
- Sesame seeds 1/2 tsp
- Coriander leaves 2-3 sprigs
- Oil 2-3 tbsp
Method:
- Clean the spinach leaves and wash them well. Remove the stalk and chop the leaves finely.
- Place the chopped leaves in a big mixing bowl and now add the flour and other ingredients. Mix well.
- Now slowly add water and knead into a slightly stiff dough. Sprinkle some oil and allow the dough to rest for atleast half an hour. This will help the gluten to relax and makes the dough very soft.
- Divide the dough into equal size balls.
- Dust some dry flour on the counter and roll into a thin roti.
- Heat an iron skillet and place one roti on it. Flip after 20-30 seconds. Apply oil on both sides and cook till are golden on both sides.
- Repeat with the other rotis.
- Serve it hot with curd, pickle or any chutney of your choice.
Notes:
- You can try stuffing these parathas with some crumbled paneer and it’s going to taste even more delicious.
