Veg Sizzler
It was a lazy sunday morning and hubby was busy working on my blog and making few changes in it. Neha was preoccupied in her room making some preparations for her class assembly and few of her friends had also joined her. I was in the kitchen contemplating what to make for lunch and then suddenly I remembered that I had promised Neha that I shall make some sizzler for her. When I had inaugurated my sizzler pan a few months back, I couldn’t click proper pictures of the same and hence the recipe never found its place in my blog. So, this time it was decided to note down every ingredient and take some step by step pictures.
Actually, sizzler is not a very difficult dish to prepare, it only requires lot of step by step preparations and keeping everything ready before we assemble it and serve it piping hot. A quick look into my refrigerator’s vegetable tray confirmed that I had almost everything ready to make a sizzler. After all we can customize it according to how we want and what we like and there is no hard and fast rule about the recipe. I made a quick visit to the nearby vegetable shop to buy a cabbage ( to make the base in the sizzler pan) and got few other ingredients too. Oh, then I remembered that I had to make some cupcakes for the kids. I made a batch of eggless orange cupcakes for Neha and her friends and then set out to make my sizzler 🙂
I decided to make a simple garlic-corn-butter rice, some grilled baby potatoes, paneer and capsicum marinated in spicy curd, grilled patties made of raw bananas and stir fried vegetables topped with a spicy sauce. I don’t know what to call this sauce, but hubby liked it a lot 🙂 Ok, so lets get to the list of ingredients and the method of making this.
Ingredients:
Step 1 – For the rice:
- Basmati rice 1 cup
- Salt to taste
- Garlic cloves 5-6
- Boiled corn 3-4 tbsp
- Spring onion green 2-3 sprigs
- Oil/Butter 1-2 tsbp
- Red chili flakes 1 tsp
Step 2 – For the grill:
- Baby potatoes 15-16
- Paneer 150 gm
- Capsicum 1
- Hung curd 2-3 tbsp
- Salt to taste
- Turmeric powder 1/2 tsp
- Red chili powder 1-2 tsp
- Cumin powder 1 tsp
- Chat masala 1 tsp
- Garam masala 1 tsp
- Finely chopped coriander leaves 1 tbsp
- Oil 1-2 tbsp
Step 3 – For the Patties:
- Boiled raw banana 1 big
- Boiled potato 1 big
- Salt to taste
- Bread crumbs as required
- Green chilies 2-3
- Onion 1 small
- Coriander leaves 2-3 sprigs
- Oil 1-2 tbsp
Step 4 – For the vegetable stir fry:
- Broccoli 10-12 florets
- Carrot 1
- French beans 10-12
- Salt to taste
- Chili flakes 1 tsp
- Butter/oil 1 tbsp
Step 5 – For the sauce:
- Onion 1 small
- Crushed garlic 1 tsp
- Salt to taste
- Sugar a pinch
- Tomato sauce 2 tbsp
- Soy sauce 1 tbsp
- Pepper powder 1 tsp
- Chili flakes 1/2 tsp
- Sriracha sauce 2 tbsp (optional)
- Spring onion greens 2-3 sprigs
- Oil 2 tsp
Step 6 – For the final assembly:
- Cabbage few leaves
- Butter 1 tbsp
Method:
To make the rice:
- Wash and soak the rice for atleast half an hour.
- Cook the basmati rice in two cups of water with some salt for around 10-12 minutes.
- Crush the garlic cloves finely and cook the corn for 4-5 minutes.
- Heat some oil or butter in a heavy pan and add the crushed garlic to it.
- Saute for 2 minutes. Now add the cooked rice and toss gently. Add the cooked corn.
- Check the salt and garnish with chili flakes finely chopped spring onion greens.
- Your garlic-corn rice is ready.
To make the grill:
- Wash the potatoes and parboil it with some salt.
- Remove the skin and poke the surface with a fork or flatten it a bit.
- Cut the paneer into big chunks. Cut the capsicum into square pieces.
- Take the hung curd in a big mixing bowl.
- Add the spices and seasonings and mix well. Now add finely chopped coriander leaves.
- Add the parboiled potatoes and the paneer pieces and coat then with the curd mixture.
- Marinate for atleast an hour.
- Heat a grill pan and add some oil to it.
- Toss the potatoes and paneer till it’s golden in colour. Add the capsicum to the same grill pan and toss it.
- Keep the entire batch aside.
To make the patties:
- Steam the raw banana with the skin till it’s cooked well. Or pressure cook it along with the skin.
- Remove the skin and mash it gently.
- Add the boiled potato and mash it too.
- Chop the onion and green chilies finely.
- Heat a spoon of oil in a pan and add the chopped onion and green chilies.
- Saute them for a minute or two. Add it to the mashed potato and banana.
- Now add salt, bread crumbs and finely chopped coriander leaves.
- Shape then into patties and coat them with bread crumbs.
- Heat oil in a grill pan and shallow fry these patties till they are golden in colour. Keep them aside.
To make veggie stir fry:
- Cut the broccoli, beans and carrot into long fingers.
- Boil water in a pan and add the veggies to it. Add salt and cook for 3-4 minutes.
- Now transfer these veggies into cold water.
- Drain and keep aside.
- Heat some oil or butter in a pan and saute these blanched veggies for 2-3 minutes on high flame. Add salt and red chili flakes. Keep it aside.
How to make sauce:
- Chop the onion and spring onion greens finely.
- Heat oil in a pan and add the chopped onion and crushed garlic.
- Saute well and add the sauces and spices.
- Add half a cup of water and bring to a boil.
- Add salt to taste and a pinch of sugar.
- Finally garnish with the chopped spring onion greens.
To assemble the sizzler:
- Heat the sizzler pan on low flame for few minutes.
- Wash few big outer leaves of cabbage and lay it carefully on the sizzler pan. Be careful not to born your hands.
- If you have a ring mould, place it on the cabbage leaves and spoon out the prepared rice into it and press well. Now remove the ring carefully.
- Place some stir fried vegetables on the side and now place a pattice next to it. Now add the grilled baby potatoes and capsicum.
- Slowly remove the hot pan from the flame and place it in the wooden tray. Be very very careful when you do it.
- Now keep the tray on your dining table and add few pieces of butter on the hot pan or sprinkle few drops of water on the hot pan to get the sizzling effect.
- Drizzle the sauce on top and serve it piping hot to your family.
- Yummy and beautiful looking sizzler is ready.
Notes:
- Though the steps would look long and difficult, actually it’s not very tough. Yes you need to be very organised and keep everything ready before assembling. It’s indeed a time consuming process.
- The best part about sizzler is that you can customise it according to your family’s choice. Non vegetarians can use chicken patties or grilled chicken instead of veg pattice. The garlic corn rice can be replaced by noodles or pasta or any other flavoured rice.
- Use vegetables of your choice for the stir fry. You may add green peas, coloured bell peppers, zucchini, cauliflower.
- You can even add frech fries in your sizzler. I avoided it as I didn’t want any fried ingredient.
- The choice of sauce is also up to your discretion. You can use barbecue sauce or any sauce of your choice.
- I got this sizzler pan from Amazon and the wooden base is around 13 by 7 inches and the iron pan is atoynd 9.5 by 6 inches in dimension. After use wash and wipe it dry and apply some oil and store it to avoid rusting.
- Let me share a secret with you guys 🙂 I have only only sizzler pan. So Neha gets it and for hubby, I have used a cast iron tava that I had with me and used my wooden chopping board as it’s tray. Now on second thoughts I think I might order one more sizzler pan 🙂
