Tomato Soup
An easy peasy tomato soup without cornflour or red colour.
Ingredients:
- Tomato 4-5
- Onion 1 medium
- Garlic cloves 3-4
- Pepper corns 5-6
- Salt to taste
- Sugar 1 tsp
- Yellow pumpkin a small piece (optional)
- Butter 2 tsp
- Fresh cream 2 tbsp
Method:
- Slice the onions and chop the tomatoes and pumpkin roughly.
- Heat butter in a thick sauce pan.
- Saute the onion, garlic, pumpkin and tomatoes fof 2-3 minutes.
- Add salt, sugar and pepper corns. Pour 3-4 cups of water and bring it to a boil.
- Simmer on low flame till all vegetables are cooked well.
- Remove from fire and strain the mixture.
- Pulse the vegetable residue in a mixer till it is a fine paste.
- Add this to the strained liquid and bring to a boil. Simmer on low flame till the desired consistency is attained.
- Drizzle some fresh cream on top and Serve it piping hot with bread croutons.
