Custard wheat cranberry cookies
As you all know I love to experiment with various flours and accompaniments and try different cookies. I always look for opportunities to bake different flavoured cookies especially when I want to share it with my relatives n friends. So last week, when we had a sudden plan to visit our relatives in my hometown, I tried these custard cranberry cookies and got amazing feedback from my aunt and others. These are mildly sweet like all my cookies and the cranberries add an extra zing to these. Please do try and share your feedback.
Ingredients:
- Whole wheat flour 125 gm
- Vanilla custard powder 25 gm
- Salt a pinch
- Sugar 75 gm
- Butter 75 gm
- Baking powder a pinch
- Baking soda a pinch
- Vanilla extract 1/2 tsp
- Cranberries half cup
- Milk 1-2 tbsp (optional)
Method:
- Powder the sugar finely and chop the cranberries into small pieces.
- Sieve the flour, custard powder, salt and rising agents 2-3 times.
- Cream the butter and sugar till it’s light and fluffy.
- Add the vanilla extract and mix.
- Now add the dry ingredients and mix well.
- Fold in the chopped cranberries too and form a soft dough. Just bring together the ingredients and do not knead hard.
- Shape the cookies according to your taste and place them on a baking tray lined with parchment paper.
- Preheat the oven at 150-160 degree Celsius for atleast 10 minutes.
- Bake the cookies for 20-22 minutes.
- Allow the cookies to remain in the tray for atleast 3-4 minutes.
- Transfer them onto a cooling rack and cool well.
- Store in airtight containers.
