Vegan Banana Muffins
Have lot of over ripened bananas at home? But are you worried about the amount of maida, sugar and oil that goes in the making of such muffins? Worry not…. here is a simple healthy banana muffins with zero maida and zero refined sugar. For added health benefits, it has oats and ragi and dates syrup too. Do not expect a very rich n moist muffins. Its a simple one which is 100% guilt free.
Ingredients:
- Whole wheat flour 100 gm
- Ragi 25 gm
- Oats flour 25 gm
- Cocoa powder 1 tbsp
- Salt a pinch
- Baking powder 1/2 tsp
- Baking soda 1/2 tsp
- Dates syrup 2 tbsp
- Oil 3 tbsp
- Warm water 120 ml (1/2 cup) plus 1 tbsp
- Chopped almonds 2 tbsp
- Banana puree 3/4 cup
Method:
- Preheat the oven at 150-160 degree Celsius.
- Mildly grease a muffin mould with oil.
- Sieve the flours, salt and rising agents 10-12 times.
- Make puree of over ripened bananas in a blender.
- Add the banana puree, dates syrup, oil and water in a bowl and mix till you get a homogeneous mixture.
- Pour this mixture into the dry ingredients and fold gently.
- Fold in the chopped nuts too.
- Take one spoon of this batter, add cocoa powder and a tablespoon of water and mix well.
- Pour the batter into the muffin mould till 2/3 rd of its capacity. Drizzle a bit of the cocoa mixture on top.
- Bake for 25-28 minutes or till a toothpick inserted into the center comes out clean.
- Cool the muffins on a wire rack and enjoy.
Notes:
- I have used the big Kerala bananas (nendra pazham).
- You can add 1-2 tablespoon more oil for a softer muffin.
- Water can be replaced with milk.
