Strawberry Cookies
The last time when I baked these cookies, I gave the entire lot to one of our family friend and Neha got only a bite to taste. Since then she has been telling me to bake it again. But honestly, she is not much of a cookie person and like her dad, doesn’t like to munch much. She prefers something hot n freshly made for her snacks, which means more work for me 🙂 But when I saw fresh strawberries today, couldn’t resist buying it. Its mildly sweet, crunchy on the exterior with a slightly soft berrilicious centre. Try it and share your experience. Would love to hear your feedback. Ingredients:
- All purpose flour 100 gm
- Cornflour 25 gm
- Sugar 50 gm (1/4 cup)
- Baking powder a pinch
- Baking soda a pinch
- Salt a pinch
- Strawberries 8-10
- Butter 56 gm (1/4 cup)
Method:
- Wash and pat dry the strawberries. Chop it into bite size pieces.
- Cream the butter and sugar till its soft and fluffy.
- Sieve the flours, rising agents and salt together.
- Add the dry ingredients and the chopped strawberries into the butter-sugar mixture and mix. Do not knead hard.
- Keep the dough inthe regrigerator for an hour or so. The mixture will be sticky.
- After an hour, preheat the oven at 160-170 degree Celsius for atleast 10 minutes.
- Line a baking tray with parchment paper and keep it ready.
- Pour spoonful of the mixture on to the tray or make small balls and shape them.
- Bake for 20 minutes or till it looks done and the sides look golden.
- Remove from oven and allow the cookies to remain in the tray for few more minutes.
- Transfer onto a cooling rack and cool it well.
- Store in airtight containers. Enjoy.
Notes:
- Each oven behaves differently. So check it after 12-15 minutes. It will be slightly soft at the centre and cruchy at the sides.
- The dough looked light pink in colour, but the final cookies doesn’t look pink 🙁
- Adjust the sugar as per your taste. Mine is very mildly sweet.
- You can add raspberry or strawberry flavored custard powder instead of cornflour.
- Strawberry extract or essence can be added.
