Cajun spiced Potato
I am sure everyone likes the cajun spiced Potato served by Barbeque Nation, isn’t it? Yummy it is 🙂 I have made this at home many times before too. But posting it now 🙂 A very simple and easy starter to impress your guests. You just need some baby potatoes, some fresh mayonnaise, fresh cream and some seasonings. In case you don’t get baby potatoes, use regular potatoes and cut them into cube. Refer to the cajun spice mix revipe in the earlier post. Also, I have used home made eggless mayonnaise. Using Kashmiri chili powder gives a brighter colour to these.
Ingredients:
- Baby potatoes 16-18
- Salt to taste
- Sugar a pinch
- Cajun spice mix as required
- Eggless mayonnaise 2 tbsp
- Fresh cream 1 tbsp
- Tomato sauce (optional) 1 tbsp
- Spring onion greens chopped 1 tbsp
- Chopped onions 1-2 tbsp
- Oil 1 tbsp
Method:
- Wash the potatoes nicely to remove all dirt and mud.
- Parboil it in salt water. ( Cook till it is just done )
- Remove and allow it to cool.
- Gently flatten it in your palm. Do not break it into pieces.
- Mix the mayonnaise and ftesh cream. Add the required quantity of the cajun spice mix and mix well. Add the tomato sauce. This is optional.
- When you just few minutes away from seving your starter, heat oil in a flat frying pan and shallow fry these potatoes till they are crisp.
- Remove from the pan and arrange it on a flat bowl or plate.
- Drizzle the mayonnaise mixture on top of it.
- Garnish with finely chopped onion and spring onion greens.
- Serve hot 🙂
