Whole Wheat Oats Carrot Cookies
Hubby surprised me again two days back by asking me to bake some cookies for his office colleagues. I quickly jumped upon the opportunity and decided to try something which I have not yet baked. The first thing that came to my mind was carrots. On browsing the internet, got some ideas on how to use carrots in cookies. I was a bit skeptical about the texture. As always I wanted to bake an eggless one and was worried whether the cookies would get soggy because of the water content in carrots. But the end product is perfect crunchy at the ends and slightly chewy at the centre. It took more time to bake than the usual whole wheat cookies. To make it more healthy, I have used organic whole wheat flour and oats. Finely chopped cashew nuts and raisins add a nice crunch to it. Do try it and share your feedback with me. Happy baking.
Ingredients:
- Whole wheat flour 75 gm
- Oats 75 gm
- Salt a pinch
- Baking powder 1/2 tsp
- Maple syrup 2 tbsp
- Honey 2 tbsp
- Brown sugar 2 tbsp
- Butter 56 gm (1/4 cup)
- Mixed spice powder 1/2 tsp
- Carrot medium 1
- Raisins 1/4 cup
- Cashew nuts chopped 1/4 cup
Method:
- Preheat the oven at 160 degree Celsius.
- Line a baking sheet with parchment paper and keep it ready.
- Peel, wash and grate the carrot.
- Cream the butter, sugar, honey and maple syrup it is soft and fluffy.
- Mix the flour, baking powder, salt and spice powder. (I have used a combination of cinnamon, cloves and nutmeg powder)
- Add the grated cartot, raisins and chopped cashew nuts to this mixture.
- Now slowly add the dry ingredients to the butter mixture and mix. Do not knead the dough.
- Make small balls of equal size and place them on the parchment paper.
- Bake at 160 degree Celsius for 20-22 minutes or till the top and sides look golden.
- Remove the tray from the oven and allow it to remain in the tray for 7-8 minutes.
- Transfer onto a cooling rack and cool well.
- Store in air tight containers.
Notes:
- In case you don’t have maple syrup, add an equal quantity of honey or increase the amount of sugar. You can sprinkle few drops of milk if the mixture is too dry.

Please buy a weighing scale. It’s more accurate. I have used a 240 ml cup. 1 cup wheat is 120-130 gm, 1 cup sugar is 200 gm.
