Easy Condensed Milk
I am a big fan of all kinds of Do It Yourself. So, I was pretty excited when I saw videos on how to make condensed milk at home. I had made this for the first time last year during Diwali for making a white chocolate fudge. Then I have made it several times, but somehow never took a photo so that I can add it in my blog. Now when many of my friends requested me to post it, I had to make it again. I got a perfect chance to make it 2 days back when we had to go to our parents home suddenly. I had a litre of milk with me which I wanted to finish off before we left. So, quickly transformed it into condensed milk and stored it in an airtight container inside the refrigerator. It stays in the refrigerator for a week to 10 days and for about 2-3 months inside the freezer. The best part of making it at home is that we can adjust the sweetness according to our taste and also it becomes cost effective, with an added benefit of knowing exactly what goes in the condensed milk. Use it in making eggless cakes, Indian sweets, payasam or simply lick it 🙂
Ingredients:
- Full Cream Milk 1 litre
- Sugar 1/2 cup (100 gms)
- Baking soda a small pinch (optional)
- Butter 1 tbsp (optional)
Method:
- Take a heavy bottom open mouthed pan and pour the milk into it.
- Bring it to a boil and now add the sugar to it. Simmer it on low flame and keep stirring it continuously
- When it is reduced to almost one third of its volume, add a pinch of baking soda and remove from fire.
- Add the butter and stir well. Store it in clean airtight glass bottles and keep the bottle inside the refrigerator.
- Use it within 8-10 days.
Notes:
- It is preferred to use full cream milk and you will get around 300-350 ml of thick condensed milk.
- However you can also use normal 3% fat packet milk too. Just reduce it to 250-275 ml and you are good to go.
- This is not as sweet as the tinned one. You can add double the sugar for a very sweet version of the same.
- You can add a pinch of baking soda which will act as a preservative as well as give a nice caramelized colour to your condensed milk. But I have not used it.
- The use of butter is also optional.
