Pumpkin Mini Buns
How about some pumpkin buns filled with a spicy potato filling? Just go through the recipe and try it out 🙂
Ingredients:
- Whole wheat flour 250 gm
- Semolina 50 gm
- Salt to taste
- Chilli flakes 1 tsp
- Instant yeast 1/2-3/4 tsp
- Sugar 1 tsp
- Olive oil 1-2 tbsp
- Pumpkin 200 gm
- Water 100 ml or as required
- Turmeric powder a pinch
- Sesame seeds as required
- Any spicy filling of your choice
Method:
- Peel the skin and cut the pumpkin into big chunks.
- Cook it with little salt and turmeric powder till it is tender.
- Remove from heat and cool. Blend it in a mixer to get a smooth puree.
- Prepare any veg or non veg filling of your choice. You can use minced meat or potato or any other vegetables and prepare a dry mixture and keep it ready. I have used a spicy filling of boiled potatoes and onion.
- Mix the flour, salt (if required, since the pumpkin puree already contains salt), sugar, chilli flakes and yeast in a large bowl. Add the pumpkin puree to it and mix.
- Sprinkle water if necessary and knead for atleast 10-12 minutes into a soft and elastic dough.
- Allow the dough to double in volume in a nicely oiled bowl covered with a clean cling film.
- Once the dough is doubled in size, punch out the gases and knead again for 1-2 minutes.
- Divide the dough into small lemon size balls and flatten them in your palm.
- Take a flattened dough and fill it with the stuffing.
- Place it in a greased cake tin. Repeat with the entire dough.
- Cover and allow it to proof again for 20-25 times till it fills the tin completely and puffs up well. Now sprinkle some sesame seeds on top.
- Divide the remaining dough into 3-4 big balls of equal weight.
- Fill it with the filling and shape into round buns. Make cuts as shown below. Do not make very deep cuts. (I did that mistake and my pumpkins opened up a lot while baking.)
- Meanwhile preheat the oven at 180 degree Celsius for 10-12 minutes.
- Bake these mini buns and small stuffed pumpkin breads for 25-30 minutes or till the top looks golden in colour.
- Remove from the oven and apply some butter on top.
- Cool for a while and serve it warm with a soup of your choice.
