Egg Molee/Moilee
I didn’t want to make the usual spicy egg curry for today’s dinner along with aappam. So was thinking of a milder curry as an accompaniment. You might have heard of fish moilee, right? Here is a similar one with eggs. Very easy to make and quite mild too. Goes very well with aappam, idiyappam, idli, dosa etc. Please do try it.
Ingredients:
- Boiled eggs 3-4
- Onion 1 big
- Tomato 1 medium
- Green chillies 2-3
- Salt to taste
- Garlic 3-4 cloves
- Ginger 1 inch piece
- Turmeric powder 1/2 tsp
- Pepper crushed to taste
- Garam Masala 1/2 tsp
- Coconut milk 1/2 cup
- Curry leaves 2 sprigs
- Mustard seeds 1/2 tsp
- Refined oil 1 tbsp
Method:
- Boil the eggs till is cooked well. Remove the shell and make small incisions on the eggs.
- Slice the onion, tomato, green chillies, ginger and garlic.
- Heat oil in a kadhai and add mustard seeds. When they splutter, add the curry leaves.
- Saute the onion till translucent. Add the ginger and garlic and green chillies. Now add the tomato, turmeric powder and saute well.
- Add the thin extract of coconut milk and boil the curry for 5 minutes. Add salt and mix.
- Now add the eggs and simmer for 2 minutes.
- Add the thick coconut milk and switch off the gas.
- Sprinkle pepper powder and garam masala. Garnish with fresh curry leaves and serve hot with aappam 🙂
