Baby Potato Roast
Two days back, when I went to buy vegetables, I picked up a packet of baby potatoes. Didn’t want a spicy dum aalu for dinner, so settled for a simple jeera tadke waali aalu 🙂
Ingredients:
- Baby potatoes
- Salt
- Turmeric powder
- Chilli powder
- Coriander powder
- Cumin seeds
- Sesame seeds
- Refined oil
- Curry leaves
- Coriander leaves
- Lime juice
Method:
- Wash the potatoes nicely using a scrubber till it is clean of all the mud particles.
- Parboil it in little salt water. Remove from stove and cool them.
- When they are cooled well, slice them into half or quarters depending on their size.
- Heat oil in a heavy iron kadhai and add the cumin and sesame seeds.
- Add curry leaves when they splutter.
- Add the potato chunks and toss it gently.
- Add turmeric, chilli, coriander powder and mix. Now add salt.
- Roast it on medium to low flame till the potatoes turn nice golden and crispy.
- Add a teaspoon of lemon juice and garnish with finely chopped coriander leaves.
- Serve hot with phulkas or rice and dal.
