Whole Wheat Choco Butter Cookies
Generally, I bake cookies only when I have to gift it to someone. But surprisingly, yesterday evening, Neha asked me to bake some plain cocoa cookies for her. So here is what I made for her with 100% whole wheat flour. No frills – just plain butter cocoa cookies.
Ingredients:
- Whole wheat flour 125 gm
- Cocoa powder 25 gm
- Salt a pinch
- Butter 100 gm
- Brown sugar 80-90 gms
- Vanilla extract 1/2 tsp
Method:
- Sieve the whole wheat flour, salt and cocoa powder 2-3 times.
- Cream the butter (at room temperature) and sugar till it becomes light and fluffy. Add the vanilla extract to it and mix well.
- Add the dry flour mixture in to the butter and mix gently.
- Get everything together to form a dough. Do not knead hard.
- Allow the dough to rest for 10-15 minutes inside the refrigerator.
- Meanwhile preheat the oven at 160 degree Celsius for ten minutes.
- Line a baking tray with parchment paper.
- Shape cookies the way you Iike and arrange then on the tray.
- Bake the cookies for 17-18 minutes.
- Remove from the oven and let it stand in the tray for 3-4 minutes.
- Transfer them slowly onto a wire rack and cool well.
- Store in airtight containers.
Notes:
- For a less buttery and melt in the mouth sort of cookies, use around 75 gm of butter and sprinkle little milk to form the dough. It will still taste good.
- This is a very mildly sweet cookies, you can increase the amount of sugar if you want.
- You can add white or dark chocochips too if you wish.
- As every oven behave differently, please check your cookies after 15 minutes. They might look soft while you take them out of the oven, but will eventually harden as they cool.
