Blooming Onion Bread
Last year when I had started baking breads, I had come across this blooming Onion bread on you tube. I had tried a small version of it once with some left over dough. Its absolutely cheesy and buttery with the amazing flavour of spring onions and garlic. Perfect for a cold or rainy evening with a piping hot cup of tea or soup. You can use any bread as the base or even use buns or ladi pav. I have used a combination of whole wheat flour and semolina to make the bread.
Ingredients:
For the bread:
- Whole wheat flour 125gm (1 cup)
- Semolina 2 tbsp
- Salt to taste
- Sugar 1 tsp
- Instant yeast 1/2 tsp
- Olive oil 1 tbsp
- Water plus milk as required
For the filling:
- Spring onion 4-5
- Salt a pinch
- Butter 1-2 tbsp
- Garlic cloves 3-4
- Chilli flakes as required
- Cheese 100 gm
- Sesame seeds 1 tsp
Method:
To make the bread:
- Mix the flour, salt, sugar and instant yeast and knead a soft dough by using the standard bread kneading technique.
- Add oil while you knead and knead for atleast 10 minutes.
- Place the dough in a well oiled bowl and cover the bowl with a cling film.
- Allow the dough to rise to double its volume. This might take 40-50 minutes depending on the yeast, room temperature and weather conditions.
- Once the dough has risen well, take it out of the bowl and punch out the gases.
- Knead for a minute or two and shape it into a bog bun or a round or oval shape.
- Place it on a tray and allow it to rise again till it is puffy.
- Apply milk wash or butter wash and bake in a preheated oven for 20-25 minutes at 180 degree celsius.
- Remove from the oven and allow it to cool well.
For the filling:
- Wash and chop the spring onion and the garlic finely.
- Add soft butter, salt, chilli flakes and sesame seeds to the the chopped spring onion and mix well.
To assemble and bake:
- Take the bread and make incisions on it horizontally and vertically as shown below.
- Slice the cheese into thin pieces and stuff then inside the cuts as below and place the bread on an aluminium foil.
- Now spoon in the onion garlic butter mixture into these cuts and close the aluminium foil.
- Place the foil in a baking tray and bake it in a preheated oven at 180 degree celsius for atleast 15 minutes.
- Now open the foil and bake uncovered for 5-10 minutes till the cheese melts.
- Remove from the oven and enjoy it warm.
Notes:
- I have used Mozzarella cheese, you can use a combination of normal processed cheese and Mozzarella.
- You can even try it with store bought bread or ladi pav.
