Saffron Complan Cookies
The problem with me these days is that whenever I go to the supermarket to buy provisions, I don’t feel like buying any biscuits thinking about all the preservatives and chemicals in it. But at the same time, any house should have something to serve along with tea for unexpected and sudden guests, isn’t it? I have been thinking of baking some cookies since the past few days, but have been busy with Diwali cleaning and moreover have not been in the pink of health too during the past few days.
But finally, when hubby’s cousin called up last night and informed that she might visit us today evening, so decided to bake atleast some cookies for evening tea. Now the big question was what to try this time? Suddenly I happened to see some left over Kesar Badam Complan in my refrigerator which Neha had promised to finish few days back. But Neha being Neha, runs miles away when asked to drink milk. So the best option was to make cookies using that. I also have made Pista Complan cookies long ago and it was liked by all.
To fir bas kya tha…. soaked some saffron strands in a teaspoon of hot milk and sliced some almonds and kept it ready.
Ingredients:
- Kesar Badam Complan 75 gm
- All purpose flour 75 gm
- Sugar 50 gm
- Butter 80-90 gm
- Baking powder a pinch
- Baking soda a pinch
- Saffron a big pinch
- Badam slivers 2-3 tsp
- Milk 1 tsp
Method:
- Preheat the oven at 160 degree celsius for atleast 10 minutes.
- Cream the butter and sugar till it is creamy and smooth.
- Mix the flour, Complan and rising agents well.
- Add this to the butter sugar mixture and mix. Add the saffron milk.
- Refrigerate the dough for few minutes.
- Line a baking tray with parchment paper and keep it ready.
- Shape the dough in which ever shape you please and arrange them on the baking tray. Sprinkle saffron strands and badam crumbs on top.
- Bake for 12-14 minutes or till the sides appear golden.
- Remove from the oven and let it remain in the baking tray for 5 more minutes. Handle it very gently.
- Cool on a wire rack and store in airtight containers.
