Vendakkya Pachadi
A very simple raita also called as pachadi in Malayalam. This finds place in all my sadya or feast as it’s my little one’s favourite 🙂
Ingredients:
- Ladies finger 100-150 gm
- Salt to taste
- Fresh curd 1 cup
- Mustard seeds 1/2 tsp
- Refined oil 1 tbsp
- Green chillies 2-3
- Curry leaves 1 sprig
Method:
- Wash the ladies finger and trim the edges. Chop it into thin slices.
- Heat oil in a kadhai and shallow fry the ladies fingers till it is crisp. You can even deep fry them.
- Heat oil in a frying pan and mustard seeds to it.
- When they splutter add chopped green chillies and curry leaves. Saute them well.
- Whisk a cup of curd till it is smooth. Add this tempering to the curd.
- Now add salt and mix well. Just before serving add the fried ladies finger and mix well.
- Serve with steamed rice.
