Rasogullas
I think since I have started my blog, I have been trying to make more and more sweets at home than I have done in the last 15 years of my married life. Sanjeev is not at all fond of sweets and this has always stopped me from attempting to try out much. After I made the Rasmalai Cake for my birthday 2 months back for which I had made rasogullas and Rasmalai, I have made these 2-3 times. Now I find it very easy to make rasogullas at home. I make small small ones and I get around 10 with half a litre of milk. It is very simple and gets ready in just few minutes.
This might not be the bestest of rasogullas, but surely it is quite good in its own way with very less sugar and quite spongy too. Ideal to make Rasmalai too 🙂
Ingredients:
- Full cream milk 1 litre
- Vinegar 1-2 tsp
- Ice cubes 10-15
- Sugar 1/2 cup
- Cardamom pods 4-5 (optional)
Method:
- Boil the milk in a wide pan.
- As the milk comes to a boil, reduce the flame and add vinegar.
- Allow the milk to curdle well. Remove from fire and strain the liquid in a sieve lined with a muslin cloth.
- Pour 2 cups of water over the cloth to wash out the smell of vinegar.
- Add the ice cubes and hang the cloth till all the water is drained out. (Do not make it too dry)
- Remove the paneer on a flat plate and rub it well with the heel of your palm till you get a smooth mixture.
- Make small balls of uniform size. Make sure the balls are smooth and there are no cracks in the ball.
- Take a wide pan and add 4 cups of water and add the sugar in it. Bring it to a boil. Add the cardamom pods.
- Gently drop the paneer balls into the boiling liquid and cook on medium to high flame for 10-12 minutes.
- Slowly remove from fire and allow it to cool. Serve it cold.
Notes:
- Knead the paneer very well till it is very very soft and without any lumps.
- You can adjust the amount of sugar according to your taste.
- I have realised that refrigerating the rasogullas makes it a wee bit harder.
- Do not let the paneer become too dry when you drain out the water. Keep it a bit moist to make the rasogullas softer.
- You can make big sized rasogullas too. But make sure that you shape it smoothly.
