Digestive Biscuits
I had made a similar digestive biscuit almost a year back and since then a friend of mine has been requesting me to post the recipe in my blog. However, due to some reasons or the other, I have not been able to make this again. Finally, I decided not to delay any moment longer and try these out again in my kitchen. The problem with getting obsessed with home bakes is that you no longer feel like buying baked stuffs from stores, which includes simple biscuits too. But the kind of person that I am, I bake and distribute and that leaves nothing at home for us. So this time no distribution… I am going to keep this for the three of us. Just hoping that Neha likes it and she feels its a bit close to her favourite Nutrichoice Digestive biscuits. I got 44 biscuits with the below given measurements. Please do try and share your feedback with me. Cool the biscuits really well before you store them in nice airtight containers.
Ingredients:
- Whole wheat flour 125 gm (1 cup)
- Oats 50 gm (1/2 cup)
- Wheat bran 50 gm (1/2 cup)
- Cornflour 1 tbsp
- Salt a pinch
- Brown sugar 1/4 cup plus 1-2 tbsp
- Baking powder 1/2 tsp
- Unsalted butter 100 gm
- Milk 2-3 tbsp or as required
Method:
- Powder the oats coarsely using a mixer. Mix the dry ingredients well.
- Add butter at room temperature to the this dry mixture and rub with your finger tips till the mixture looks like bread crumbs.
- Sprinkle cold milk and assemble the ingredients to form a dough. Do not knead hard.
- Let the dough rest for 10 minutes or so.
- Meanwhile preheat your oven at 170-180 degree Celsius for atleast 10-12 minutes.
- Line a baking tray with parchment paper and keep it ready.
- Take a big lime sized ball from the dough and roll it between 2 sheets of parchment paper into a big disc of uniform thickness say around little less than 1/2 cm.
- Cut into circles using a cookie cutter or the lid/cap of any bottle of say around 2-2.5 inch in diameter.
- Arrange them neatly on the baking tray and poke some holes on it with a toothpick for uniform baking.
- Bake these biscuits for 15-18 minutes or till it looks golden.
- Remove from the oven and let it remain in the tray for 3-4 minutes.
- Transfer these onto a cooling rack and let it cool fully. Once cooled store them in airtight containers.
- Enjoy these with your tea or coffee 🙂
Notes:
- You can replace brown sugar with normal powdered sugar.
- Wheat bran is optional. You can add same quantity whole wheat flour (wwf) or all purpose flour (apf).
Can i substitute sunflower oil for butter?
Texture will change. But u can try
hi u have written 1 cup n mention 125 gm. m confuse. n u have also written preheat the oven for atleast 10 min m using microwave when I on preheated button it automatically preheat it doesnot allow me to set time or I dont know. could plx gv ur suggestions
I cup flour is 125 gm.
Check your me manual..I do not bake in a microwave..I have a cooking range.
You can use gm measurements or cup measurements.
