Cauliflower Potato Fry
A very simple and easy way to make cauliflower potato subzi. Just mix all ingredients and stir fry it in a kadhai. It saves lot of time when you are really busy in the morning making dabbas for all in the family. If you plan ahead and clean and cut the cauliflower the previous night, it will get even more easier. Enjoy these with rotis or rice, it tastes equally good with both.
Ingredients:
- Cauliflower 1 medium sized
- Potatoes 2 medium
- Onion 1 medium
- Salt to taste
- Turmeric powder 1/2 tsp
- Chilli powder 1 tsp
- Coriander powder 2 tsp
- Garam masala a pinch (optional)
- Greens for garnishing
Method:
- Clean the cauliflower and put the florets in water for some time. Peel the potatoes and dice it into wedges. Slice the onion finely.
- Sprinkle salt and all the spices on the cut vegetables and mix well.
- Heat oil in a heavy iron kadhai or a non stick pan ( I prefer kadhai ) and add cumin seeds (jeera) to it. Add the vegetable mixture and stir gently.
- Cover and cook for 10-15 minutes till the vegetables are cooked well.
- Open the lid and cook for 3-4 minutes for a crispier effect. Garnish with finely chopped coriander leaves ( I didn’t have it ) or use some spring onion leaves.
- Serve it warm with hot phulkas or dal-chawal or pack it in your kid’s lunch box along with rotis/phulkas.
