Cucumber Peanut Salad
A simple and easy salad- perfect during this warm summer. You may choose to skip rice/roti and just have a big bowl of this health packed dish along with a big glass of chilled masaledaar buttermilk.
Ingredients:
- Cucumber 1 small
- Onion 1 small
- Tomato 1 small
- Green chilly 1
- Salt to taste
- Pepper powder to taste
- Chat masala a pinch
- Capsicum a small piece
- Boiled corn 1-2 tbsp
- Chopped apple 1 tbsp
- Roasted peanuts handful
- Lime juice 1 tbsp
- Coriander/parsley/basil as required
Method:
- Mix all the chopped vegetables in a big mixing bowl.
- Sprinkle salt, pepper, chat masala, lime juice, herbs and toss it with roasted peanuts.
- You can drizzle some olive oil on top if you wish to.
