Broccoli-Corn Clear Soup
Ingredients:
- Onion 1 big
- Garlic 4-5 cloves
- Salt to taste
- Pepper to taste
- Bottle gourd 1 cup
- Carrot, beans and any such vegetable 1/2 cup
- Blanched broccoli florets 1/4 cup
- Boiled corn 1 tbsp
- Butter 1-2 tsp
- Cheese 1 tsp (optional)
- Coriander/parsley 1 tsp
Method:
- Slice and cut all vegetables and keep aside.
- Cook onion, garlic, bottle gourd, carrot, beans in 2 cups water till it is fully done.
- Strain the liquid and separate out the cooked vegetables. ( Do not discard them, you can eat it)
- Heat little butter in a pan and saute the blanched broccoli florets and boiled corn.
- Sprinkle some sauteed veggies in a bowl and add the clear liquid on top of it.
- Garnish with grated cheese and finely chopped parsley or coriander leaves and serve it hot with any home made bread.
