Rava Khichdi
If you have visited any Tamil Nadu restaurant for breakfast, you should surely not miss this delicious lip smacking breakfast item. Also called as vegetable upma in some places, this is a wholesome balanced meal with lots of veggies in it. You can make it more richer and flavourful by increasing the amount of ghee and adding more nuts. This is also an ideal snack/lunch box item for your kids. You can use the normal rava or the roasted one or the chirotti rava. Add almost 3 to 3.5 times water and you will end with a a nice gooey soft khichdi and not the dry one. Serve it with hot sambar and coconut chutney or eat it simply with some cold curd or raita and it is sure to win your hearts.
Ingredients:
- Rava/Semolina 1 cup
- Salt to taste
- Onion 1 medium
- Peas handful
- Tomato 1 medium
- Carrot 1 medium
- French beans 8-10
- Capsicum 1 small (optional)
- Green chillies 2-3
- Ginger 1 inch piece
- Curry leaves 2 sprigs
- Coriander leaves 2 sprigs
- Mustard seeds 1 tsp
- Udad dal 1 tsp
- Refined oil 2-3 tbsp
- Ghee 1 tbsp or more
- Turmeric powder 1/2 tsp
- Cashew nuts 4-5 (optional)
Method:
- Finely chop the vegetables and keep it aside.
- Heat oil in a heavy bottom non stick pan and add mustard seeds to it.
- When these splutter, add the curry leaves, udad dal and cashew nuts. Fry these for a minute or two.
- Add the vegetables and rava and stir it well. Add salt and turmeric powder and mix. Saute them for 3-4 minutes.
- Add 3 cups of boiled water into it and mix well. Cover with a lid and cook on low flame till the water almost dries up. You can add half a cup of water more if you feel the rava is not cooked well. Add the ghee and stir gently.
- Remove from fire and keep it closed for 5-10 minutes. Garnish with finely chopped coriander leaves.
- Serve it hot with coconut chutney and sambar or any raita or simply with curd.
