Custard Nankhatai
I had a big pack of custard powder lying in my fridge and didn’t want to make karachi biscuits again. Also, a custard or a fruit salad didn’t appeal to me at that time. So, the option left with me was to try out some other cookie or biscuits with it. So, this time it was custard flavoured nankhatais. Made these and packed it to my cousin who had come to visit us. I was super impressed with the nice golden colour of it and the mild aroma of custard. I have used vanilla flavoured custard powder.
Ingredients:
- All purpose flour 1/2 cup (62-63 gm)
- Fine semolina/chirotti rava 2 tbsp
- Custard powder 2 tbsp
- Powdered sugar/icing sugar 2-3 tbsp
- Ghee 2-3 tbsp
- Chopped pista/almonds 1-2 tbsp
Method:
- Mix all purpose flour, semolina and custard powdered till its combined well.
- Add the powdered sugar into it and slowly add ghee till a smooth dough is formed. The amount of ghee will depend a bit on the type of flour.
- Line a baking tray with parchment paper and keep it ready.
- Preheat the oven at 160-180 degree celsius for atleast 10-12 minutes.
- Pinch out small balls from the dough and make small smooth balls and place them on the parchment paper.
- Make a small criss cross slit at the centre and sprinkle some very finely chopped nuts on the nankhatai.
- Bake these for 15-17 minutes or till the sides appear a bit golden in colour.
- Remove the baking tray from the oven and allow the nankhatai to remain in the tray for 4-5 minutes.
- Gently remove the nankhatai from the tray and place them on a wire rack and allow them to cool well.
- Store in airtight containers and enjoy them.
Notes:
- You can add half a teaspoon of cardamom powder for flavour or half a teaspoon of vanilla extract.
- I got small 14 nankhatais with the above measurement.
- Ghee can be replaced by an equal quantity of butter.

Hi.. in some nankhatai recipe you used baking powder and baking soda but in another you haven’t… can u plz explain
U can always skip. I used for my first nankhatai recipe… Then I realised u don’t need to. U can add or omit as per ur wish

No Shweta. Not needed. Generally for any cookies we do not add water. If the dough appears too dry then add a spoon of milk or add more butter.
