Butter Cookies
A big thanks to my baker friend Malathi Kamalakannan for her simple 3 ingredients recipe of butter cookies. I added some vanilla extract for flavour. It is extremely simple and easy to make and melt in the mouth texture. The measurements are also very easy to remember. No rising agents are used here. These are perfect for icing and filling or doing any decorations on top. Do not forget to check the post on chocolate filled butter cookies and cornflakes butter cookies.
Ingredients:
- All purpose flour 100 gm
- Butter 75 gm
- Powdered sugar 50 gm
- Vanilla extract 1 tsp
Method:
- Cream the butter and sugar well till it is frothy and fluffy.
- Add the flour slowly and combine to form a dough. Do not knead hard.
- If the dough is too soft, refrigerate it for few minutes.
- Line a baking tray with parchment paper and keep it ready.
- Pinch a small portion of the dough and flatten it in your palm.
- Use a cookie cutter of desired shape and cut it. Place it slowly on the tray. Or you may roll the dough on a dusted surface or between a layer of parchment/butter paper into a disc of around 1/4 inch thickness.
- You can refrigerate the tray with the shaped cookies for few minutes to avoid the cookies from spreading too much.
- Preheat the oven at 180 degree Celsius for atleast 10 minutes.
- Bake the cookies for 15-16 minutes or till the sides appear a bit golden.
- The cookies will be very soft when you remove it from the oven. It will eventually harden as it cools.
- Remove from oven and let it rest in the tray for 3-4 minutes. Gently transfer onto a wire rack and allow it to cool well.
- Store in airtight containers. Enjoy these with a cup of warm milk.

Ok..if you use a 240 ml cup size, for 1 cup maida, use half cup minus 1 tbsp butter and 1/3 cup powdered sugar.
