Broccoli Potato Stir Fry
Broccoli is one of the best-known cruciferous vegetables and is enjoyed worldwide in many different kinds of cuisine. It is surely one of the most healthiest food in the world. It has lot of anti-inflammatory properties, omega 3, anti oxidant properties and has a very low glycemic index. It should never be overcooked and just steamed or stir fried to retain its health benefits. Here is a quick recipe which bis not only tasty, but healthy too.
Ingredients:
- Broccoli florets 1 cup
- Boiled potatoes 2
- Onion 1 small
- Garlic 2 cloves
- Salt to taste
- Turmeric powder 1/2 tsp
- Red chilli powder 1 tsp
- Coriander powder 1 tsp
- Refined oil 1 tbsp
Method:
- Clean the broccoli and soak the florets in water for some time.
- Boil water in a pot and add some salt to it. Blanch the florets in the boiling water for 4-5 minutes and drain.
- Slice the onions and garlic finely. Peel and chop the boiled potatoes into cubes.
- Heat oil in a kadhai or a non stick pan and saute the onions and garlic till they are soft.
- Add the potatoes, salt, turmeric, chilli and coriander powder and stir fry for few minutes.
- Add the blanched broccoli and mix well. Just cook it for 3-4 minutes. Gently toss everything together.
- Serve it hot with steamed rice or jeera rice. A healthy and quick side dish for rice or roti is ready.
