Veg Clear Soup
Ingredients:
- Onion 1 big
- Galrlic 4-5 cloves
- Carrot 1 big or 2 small
- Brocolli florets n stem 1/2 cup
- Beans 6-7
- Corn kernels boiled 2 tbsp
- Spring onion 1 tbsp
- Salt as required
- Pepper powder to taste
- Butter 1 tsp
Method:
- Pressure cook onion, few carrot pieces,3-4 beans, broccoli, garlic and few pepper corns with 3-4 cups water till its done.
- Remove from the gas and strain it in a sieve. (do not discard the cooked veggies, eat it moms). Keep this clear solution aside.
- Blanch some finely cut carrots, 3-4 beans, broccoli florets in boiling water for 2-3 minutes. Strain and keep aside. (you can add this water to the soup while boiling)
- Take some butter in a frying pan and saute these blanched veggies along with cooked corn kernels, finely chopped spring onions and keep aside.
- While serving, sprinkle these sauteed veggies in a soup bowl and pour the hot clear soup on this.
- Adjust salt, sprinkle some pepper powder and enjoy it hot.

- This serves 3 people. You can vary the veggies as per your choice.
