Tomato Rice
You have left over rice with you? Worry not… An instant yummy tomato rice can be made with simple ingredients from your kitchen. Ideal for school lunch box and healthy too. Neha loves it and I’m sure all the kids would love it.
Ingredients:
- Cooked Basmati rice 1 cup
- Onion 1 big
- Tomatoes 2 big
- Curry leaves 2 sprigs
- Coriander leaves/ Spring onions 2 tbsp
- Salt to taste
- Chilli powder 1 tsp
- Turmeric powder 1/4 tsp
- Mustard seeds 1/2 tsp
- Refined oil 1 tbsp
Method:
- Heat oil in a non stick pan. Crackle the mustard seeds in it and add the curry leaves. Fry thinly sliced onions in the oil till its pink in color.
- Add finely chopped tomatoes, chilly powder, turmeric powder and salt. Cover and cook till the tomatoes become soft and mushy.
- Add the cooked rice and mix gently so that the tomato masala gets fully incorporated into the rice.
- Garnish with finely chopped coriander leaves or spring onions and serve with papad or fryums or salad. My daughter loves to take this to her school for lunch.
