Spicy Fried Rice
An instant lunch box item for your kids. Free from ajino motto or store bought sauces. Tasty and healthy recipe, which I am sure all kids would love to eat during lunch break in school.
Ingredients:
- Cooked basmati rice 1 cup
- Salt to taste
- Carrot 1 small
- Capsicum half
- Beans 5-6
- Cabbage 1 small slice (optional)
- Spring onions greens 3 tbsp
- Onion 1 big
- Garlic cloves 2-3 (optional)
- Chilly flakes 1 tsp
- Oil 1-2 tbsp
Method:
- Finely slice the onion and keep aside. Blanch finely chopped carrot and beans. Chop capsicum, cabbage and spring onion leaves finely.
- Heat oil in a nonstick pan. Add the sliced onions and finely chopped garlic (optional) and fry till pink on high flame. Add the carrot pieces, beans, shredded cabbage and capsicum and mix well.
- Add the cooked rice and mix gently. Sprinkle salt and chilly flakes and mix.
- Garnish with spring onions and serve hot or pack it in your kid’s lunch box.
