Spicy Flower Bread
Ingredients:
- Whole wheat flour 125 gm (1 cup)
- Sugar 1 tsp
- Instant yeast 1/4 tsp
- Lukewarm water 100ml
- Olive oil 1 tbsp
- Chilli flakes 1/2 tsp
- Sesame seeds 1/2 tsp
For the filling:
- Paneer crumbled 125 gm
- Onion 1 cut into small pieces
- Capsicum 1 cut into small pieces
- Tomato 1 deseeded and cut into small pieces
- Coriander leaves as required
- Salt to taste
- Turmeric powder 1/4 tsp
- Chilli powder 1/2 tsp
Method:
- Heat oil in a pan. Saute onion till translucent. Add capsicum, tomato, salt and other spices and mix well.
- Add crumbled paneer and coriander leaves and mix well. Allow it to cool.
- Mix all dry ingredients and knead into a smooth and soft elastic dough using warm water and oil.
- Knead well for attleast 10 minutes till you get a soft and pliable dough.
- Keep the dough in an oiled bowl and cover the bowl with a cling film and keep it in a warm place for it to double in size.
- After it doubles, punch the dough and knead again for a minute.
- Divide the dough into two equal parts. Roll out both into a thick disc of approx 8-9 inches in diameter.
- Keep the rolled roti on a parchment paper and spread the filling on it evenly.
- Now cover it with the other roti. Make a cricular mark in the centre with a lid. Make 12 slits on the edges.
- Twist each strand. Join ends of the two adjacent strands and press well. Apply some oil or milk wash the top of the flower bread.
- Keep it aside covered for 30-35 minutes till it is well proofed. You can sprinkle some sesame seeds or chilli flakes or herbs on top of the bread.
- Meanwhile, preheat the oven for 10 minutes at 180 degree celsius.
- Apply some more milk wash on top and bake for 20-25 minutes or till you get a golden crust on top.
- Remove from oven and apply butter liberally on the top and allow it to cool on a wire rack. Enjoy it warm with any sauce or dip of your choice.
Notes:
- Try changing the filling and making it. You can apply pizza sauce and cheese and make a similar one.
- For those with a sweet tooth, try it with chocolate spread or apple-cinnamon or strawberry compote… choice is yours.
- You can make three layers and fill with two different stuffings.
- I have used fully whole wheat flour, you can opt for a combination of whole wheat flour and maida too.
