Potato Rice
Yet another dish which is quick to make and is equally healthy n tasty too. The best part is Neha loves it 🙂 A smart home maker will always have some quick fix recipes under her sleeves, isn’t it? It always help to have some boiled potatoes in the fridge. A jhatpat recipe which is quite yummy and healthy too. Ideal to pack in your kid’s lunch box.
Ingredients:
- Cooked Basmati Rice 1 cup
- Salt to taste
- Onion 1
- Boiled potatoes 2 medium ones
- Refined oil 1 tbsp
- Turmeric powder 1/4 tsp
- Red Chilli powder 1/2 tsp
- Coriander powder 1 tsp
- Garam Masala 1/2 tsp
- Sesame seeds 1/2 tsp
- Cumin seeds/jeera 1/2 tsp
- Mustard seeds 1/2 tsp
- Curry leaves 1 sprig (optional)
- Coriander leaves chopped 1 tbsp
- Spring onion green chopped 1 tbsp
- Lime juice 1 tbsp (optional)
Method:
- Slice the onions finely and chop the boiled potatoes into small cubes.
- Heat the oil in a non stick pan or heavy kadhai.
- Add the mustard seeds, cumin seeds and sesame seeds and allow it to crackle. Toss in the curry leaves.
- Saute the onion slices till it turns pink and translucent.
- Add the potato pieces and mix well.
- Now add the spices to the potato onion mixture and stir.
- Add the cooked rice and toss gently. Sprinkle salt as per your taste.
- Garnish with coriander leaves and/or spring onion greens. Add lime juice if you wish.
- Serve warm with cold raita or pack it in your kid’s lunch box after it is cooled well.
