Tomato Pasta
Neha loves home made pasta and specially the one with Arabiata sauce. These may not be the authentic Arabiata pasta, but I can vouch for its taste and assure you that it is very easy to make it at home without the use of very sophisticated ingredients. All you need is some good ripe tomatoes, onion, Italilian seasonings, tomato sauce and some cheese. You can add lot of vegetables and make it more healthier and even make your fussy and finicky kids to eat some veggies 🙂 Please do try out and let me know your comments.
Ingredients:
- Pasta 1 cup
- Salt to taste
- Sugar a pinch
- Onion
- Garlic
- Tomatoes
- Tomato sauce
- Tomato puree
- Chilli powder
- Oregano
- Cheese
- Parseley
- Capsicum
- Steamed broccoli
- Paneer
- Olive oil 1 tbsp
Method:
- Cook the pasta In 1 litre water till it is half done. Or read the instructions on the pasta packet.
- As the pasta is getting cooked, thinly slice the onions, tomatoes and keep aside. Finely chop the garlic and cut the broccoli, capsicum and paneer into bite size pieces.
- Heat oil in a pan, add the garlic and onion to it and saute till it is translucent.
- Add the tomato pieces and cook till it is soft and mushy. Add the tomato puree and sauce to it.
- Add red chilli powder, salt and a pinch of sugar and stir. Add the vegetables to this mixture.
- Add the cooked pasta, grated cheese and add a little hot water and mix well.
- Sprinkle oregano on top and garnish with parsley leaves and serve warm.
Notes:
- If you are cooking the pasta ahead of making the sauce, then drain the pasta from the boiling water and sprinkle little oil on top to prevent it from sticking to each other.
- The choice of vegetables is entirely yours.
- You can add a tablespoon of fresh cream in the end to make it more creamy and richer.
