Hasselback Potatoes
Ingredients:
- Potatoes 3
- Salt to taste
- Olive oil 1 tbsp
- Chopped garlic 1 TSP or more
- Chilli flakes a pinch
- Coriander leaves 1 tsp
- Butter 2 tsp
- Cheese 1 tbsp
Method:
- Wash the potatoes nicely and make slits on it 1 mm apart taking care not to cut the base. (On googling I found out that a good idea is to keep the potato on a big laddle and slice it, so that the knife doesn’t reach the base of the potato)
- Brush some olive oil on top and bake in a preheated oven at 180 degree celsius for 30 minutes. Apply some more oil and sprinkle some crushed garlic, chilli flakes in between the slits and bake again for 30 minutes or so.
- Remove from the oven and apply some butter, grated cheese and bake at 200-210 degree celsius for 7-8 minutes till the potatoes look crispy and done.
- Smear with remaining butter and sprinkle some fresh coriander leaves or fresh parsley on top and serve hot.
Hi Pradeepa, This doesnt talk about the role of butter, which is one of the ingredients suggested.
