Garlic butter pull-apart flowers
It was a lazy sunday mid morning and I was in no mood to make the usual dal-chawal or rice-sambar kind of lunch. When I asked my family about their views, they too agreed with me. It was decided that we shall have some pizza for lunch. I was a bit bored of baking the same old thin crust and thick crust pizza time and again. So, opted for a different flavoured flower like pull apart bread stuffed with spring onions, garlic, butter and chilli flakes along with pizza of course 🙂 To make it more healthier, I have used 75% wwf and 25% apf.
Ingredients:
For the bread dough:
- Whole wheat flour 125 gm (1 cup)
- Maida/apf 30-35 gm (1/4 cup)
- Salt to taste
- Sugar 1 tsp
- Instant yeast 1/4 tsp
- Olive oil 1-2 tbsp
- Milk plus lukewarm water ~ 100 ml
For the filling:
- Butter 2-3 tbsp
- Spring onions finely chopped 1/2 cup
- Garlic cloves finely chopped 4-5
- Salt to taste
- Chilli flakes 1 tsp
Method:
How to prepare the filling:
- Mix butter, finely chopped spring onions, finely chopped garlic, salt and chilli flakes thoroughly. Keep it in the refrigerator for 5-10 minutes.
How to prepare the dough:
- Mix maida, whole wheat flour, sugar, salt and instant yeast. Add milk-water mixture to the dry ingredients and combine well.
- Add oil and knead into a smooth and soft elastic dough for 10-12 minutes. Allow it to rise in an oiled bowl covered with cling film for an hour, or till it doubles in volume.
- Gently punch the dough and knead for 1-2 minutes on a floured surface.
How to make the flower like pull apart:
- Take the dough and divide it into 18 equal pieces.
- Make small puris ( around 3 inches in diameter ). Apply a teaspoon of the filling in the puri and fold it like the letter D. Actually, it is not a full D, leave some space at one end of the semi circle and pinch the ends of the diameter.
- Repeat this for the remaining puris and place them on a greased cake tin. ( I have used an 8 inch round cakepan ).
- Keep a round small bun with the filling in the centre as seen in the picture. For details u can refer you tube.
- Keep the pan covered for 20-25 minutes and allow it to proof well.
- Bake at 180-190 degree celsius in a preheated oven for 25-30 minutes or till you get a nice golden sheen on top. Enjoy with any dip or sauce.
Notes:
- You can use any filling of your choice. The spring onion butter filling didn’t go very well with folks at home. So, next time I will make some paneer filling.
- Those with a sweet tooth can use some apple-cinnamon or coconut-sugar/jaggery or chocolate or any other berry compote or gaajar ka halwa as filling and make this beautiful flower.
- I have tried these with fully 100% whole wheat flour with a spicy paneer masala filling. Posting the photos for reference.
Can l use only maida or only atta instead of mixing………
Yes u can. Texture will vary. Also adjust liquid ingredients
Why do my breads dont get that dark colour on top, inspite of using it in convection mode of microwave.
Oven issues. Get oven temp checked. U can use egg wash or milk wash or butter wash for colour on top
