Coconut Chutney 4


What do you do when you realise that you do not have green chillies to make coconut chutney and you have already made idlies? No need to worry… here is a simple coconut chutney which uses red chillies and is equally yummy as the one with green chillies.
Ingredients:
- Fresh coconut 1/2 cup
- Dried red chillies 3-4
- Ginger 1/2 inch piece
- Shallots 1-2
- Salt to taste
- Mustard seeds 1/2 tsp
- Curry leaves 1 sprig
- Oil 1 tsp
Method:
- Scrape the coconut and grind it in a mixer with chillies, ginger, shallots and salt.
- Heat oil in a small pan and crackle the mustard seeds and add the curry leaves. Pour the ground coconut mixture into the pan and cook for less than a minute.
- Enjoy it with idli/dosa, pongal or vada.
