Brownies
Brownies has been in my to-do list since a long time. Neha had been requesting me to bake brownies for her since long. What day better than Children’s day to make her favourite dessert. So, this was my Children’s day gift for my little one along with some pizza and garlic bread. I started my search for those perfect brownies. Most of the perfect looking fudgy brownies had eggs in them and Neha wanted an eggless one. This made my task a bit difficult. Finally after reading lots of blogs and seeing many videos, I came up with my own version. I do not claim it to be the best brownies, but my Neha loved it and that was more than enough for me.
Ingredients:
- Maida/apf 1 cup (125 gm)
- Brown sugar plus white sugar 50:50 – 1/2 cup
- Butter 100 gm
- Salt a pinch
- Baking powder 1 tsp
- Cocoa powder 1 1/2 tbsp
- Milk 1/4 cup plus 1 tbsp
- Dark chocolate 75 gm
- Vanilla essence 1 tsp
- Thick curd 1 tbsp
- Roasted walnuts crushed 1 tbsp
Method:
- Preheat the oven at 160 degree celsius for 10 minutes.
- Chop the chocolate into small pieces and melt it along with butter over a double boiler.
- To this mixture, add sugar, vanilla essence and whisk well.
- Sieve maida, baking powder, salt and cocoa powder 2-3 times.
- Add these dry ingredients to the chocolate-butter mixture and mix well adding milk and curd in between.
- Mix well and form a smooth batter.
- Pour the batter into a 7×7 square tray lined with parchment paper ( let the parchment paper be long enough so that it hangs from the sides of the tin and its easier to take the brownies out of the tray ).
- Sprinkle finely chopped walnuts and bake for 20-25 minutes or till a tooth pick comes out clean.
- When it is sufficiently cold, cut into 2×2 inch square pieces and enjoy it as it is or with a generous scoop of vanilla icecream.
